Consider purchasing an "InstantPot" instead of this. It accomplishes a lot more, is EXTREMELY well made and is significantly less expensive. Its a pressure cooker, slow cooker, saute, rice cooker, it even makes yogurt and cheese cake. READ reviews on Amazon. Its an amazing appliance. Highly recommend!!!

rayce444They are different things. Viking is a top quality company and their ranges are used by the best chefs in the world. This is a really neat drop at $124 imo.

rayce444I have a stovetop PC. The only reason I'm considering replacing it is 1)to get a larger one; 2) to get an immediate pressure release. I can sauté in my PC; I can cook rice in my PC; I can cook a cheesecake in my PC. Okay, I can't make yogurt in my PC but I really don't like yogurt. As for slow cooker, I really don't like foods cooked in my slow cooker and am thinking about getting rid of mine. The Instant Pot, and other of it's type, are difficult to use at altitude (I live at 9200 ft) and I just don't want to bother to figure out how to fix a recipe every every time I decide I want to use it. BTW, a rule of thumb I've developed for me is that for every 6 hours on high for a slow cooker, I cook in my PC 25 minutes.

rayce444InstantPot is for noobs. A pressure cooker is essential for a professional kitchen. Plus I would trust Viking to make something that would outlast a plastic, electronic pot by a decade or so.

rayce444the decision to go electric is more about not monitoring pressure or time. Last night I made beef stew ala serious eats in my stovetop Kuhn Rikon and was able to beautifully brown meat and veg, set pressure and cook
if You like gear to last decades, buy this. If you want to set and forget, go with an instant pot.

rayce444I would say an alternative. A decent amount of them have had issues. If you have a best buy Neary out check for the insignia one. Better discount and quality.

smallbitJust an FYI, Viking commercial (restaurant equipment) is an ENTIRELY different beast than their consumer lines. As a restaurant owner and homeowner, I would absolutely purchase their restaurant equipment, but would not buy their consumer products. There are better and/or more affordable products out there for consumer use.

My Instant Pot has a altitude compensation. I've tested it in Bogotá and it works fine. I don't have to adjust recipes that I use at sea level in Florida.

cledryI know that Breville makes one with altitude compensation, but didn't know Instant Pot does. Good to know. I think I'll still stick with my stove top, but thanks for the update.

Yes, the Ultra models do. I got a good deal with my wife's employee discount $60. Too good to pass. Sold my stove top one after having the Instant Pot for a month. Mostly a fault of the stove, glass top halogen burners never seemed to regulate the temperature well. Plus I never felt safe leaving my stove top one unattended. The Instant Pot for some reason doesn't make me feel anxious leaving the house while it is working.
