btw, is brass stronger or is the stainless steel stronger? For example, will the brass flat-top be less durable over time (with wear and tear) because it is softer RELATIVE to the stainless steel flat-top?

Afaik, stainless steel will last longer and is more durable but looks duller. If you like it, Brass will develop patina which adds a unique look.
