I mean the jumper pads. How do you solder them together. Only with lead or do you have to use jumpers, or some other method? "There are a few small jumper pads next to their corresponding RGB LEDs that need to be bridged, based on the layout you plan on assembling the board with. "

You don't need any wire, you just bridge them with solder. If you'd rather use wire, any wire will work, but you shouldn't have to.

You just need to solder two pads that are very close together to turn on certain LEDs that share a spot with ANSI / ISO. No need for wire.

so soldering the pads is only for making the correct leds to work, not for the switches to work accordingly to the choosen layout?

Correct, but you should still solder the correct pads that correspond to your layout or there are certain LED effects where certain LEDs will not display the right colour (or torn on) until 7 pads are jumped.
