Is there a way to adjust the speed using a strobe mat? Looking at the Fluance tables, there are holes on the underside for speed adjustment with a screwdriver. I assumed all turntables had this ability, but nothing in the Drop/AT owners manual mentions it.

Speed adjustment should not be necessary and I don't think the table was designed for it. The "active speed stabilization" in the description is an optical sensor that reads a printed disk mounted under the main spindle bearing. The sensor should control the servo motor to maintain proper speed. Not sure how effective it is since the wow and flutter spec is average to mediocre.

obertonAlso the adjustment on the Fluance tables are for the RT80/81 only, as they do not have the optical sensor like on the RT82-85 (and this AT table).
