What are the color codes for the beige on the keycaps, is it the original color or is it different, I am trying to get paint for my keyboard to make the plates noctua themed as well

Noctua fans are made from Sterrox®, so even identical color on the ABS would not look identical

These were made using actual Noctua products and spectrophotometry, you won't ever find an identical match in paint, not even the keys themselves are an identical match to the fans since the fans are made of a plastic polymer that is different than ABS. Also the texture of the fans is not the same as the keys. Impossible to have a match, only close enough.

How do you do per-key RGB lighting on a Shift V2?

I saw the online configurator that lets you do this on the Shift V1, where it spits out a compiled firmware file to flash. The V2 doesn't seem to have this function in the Windows configurator, though. I can't imagine the answer here is "you're going to have to manually write the hex for every key in QMK, compile it, and flash that".
