It's been a while since I last posted.
It's a blistering hot summer here in Australia, and yet I felt like cooking some soup!
Diced up 2 yellow onions
Roughly chopped up about a kilo of mushrooms, you can use any mushroom of choice.
For an extra kick, rehydrate some dried shitake mushrooms and add them in!
At the bottom of my pot, I melted some butter, about 50g and started to sweat my onions.
I added in some chopped up thyme and garlic, and continued sweating my onions till they were translucent.
Into the pot, all the mushrooms went, and another 50g of butter.
This part takes a while, i really cook down the mushrooms till all of the water has dried out. I really wanna try and get as much flavor as possible.
Once the mushrooms and onion mixted is pretty much caramelized, I added 6 cups of home made chicken stock and a cup of heavy cream.
If you wanna be fancy, you can use some red wine or any other liquid of choice.
Finally, I blended it up in batches. I did not blend it for too long, as i wanted it to have some chunks and a lil texture.
I don't have an immersion blender, and am wondering if it would work so much better.
Topped off with a drizzle of cream and some freshly cracked pepper.
