What should I be looking for in a quality headset?

I'm thinking of purchasing a good quality headset but I know little of the value of these products. I'm thinking to spend no more than 200 dollars and was wondering what information I need going into making a decision. I'm an avid listener of audiobooks and podcasts, as well as occasionally music, and I use music and media to help me focus. I've always preferred an over the ear set for comfort. That in mind, do you have anything to suggest or mention?

Do you want a headset or a headphone? A headset will include a mic, and for over ear will most often be a package deal with the headphone and a boom mic attached to each other. For speech focus with some music, it is VERY hard to argue with Sennheiser in general. They have a lovely focus on the midrange that contains useful speech information. If you are OK with open back (you don't need isolation from sound in the room or to keep your music too quiet), the Massdrop Senn HD6xx would be perhaps the very best value you can get for $200. If you want a mic, the Massdrop Sennheiser PC37X is an excellent option.
