mate, all you've really done is named a bunch of features that you'd like to see in a dream keyboard. we all have one. mine has a built in soc that runs a Linux distro, my friends has a dot matrix print head that allows it to be used as a typewriter. your best bet is to learn the skills and make it yourself.

HHKB layout keyboards that are Cherry MX hot-swappable
I see on Drop that the Tokyo 60 keyboard is rarely available. There is something in kit-packaging but not in black as I would love it. I love the HHKB layout to the point that I am configuring my ALT keyboard and my Hexgear Gemini as close as possible to it. But I struggle with keycaps due to the "backspace" and "|" swaps that the keycap sets on drop do not support. Why is Tokyo60 so rare on drop? What are the alternatives to it?

Game boy Inspired custom key board.
This is a new board I just built. I millmaxed the pcb, pe foam modded and added poron foam to the bottom of the case. Used NK box cream switches and used a dmg clone set 🥲. ( I’m in gmk dmg r3) but that could be over a year till it’s ready. I also added the game boy logo to the board. I think it turned out fantastic. Lmk what you think? How do you do per-key RGB lighting on a Shift V2?
I saw the online configurator that lets you do this on the Shift V1, where it spits out a compiled firmware file to flash. The V2 doesn't seem to have this function in the Windows configurator, though. I can't imagine the answer here is "you're going to have to manually write the hex for every key in QMK, compile it, and flash that".
