Don't get ceramic it's much less durable than traditional non stick. The coating will wear out after just moderate use. If you are worried about how safe non stick coatings are I recommend a well seasoned carbon steel pan.

JbaboThanks. I'm actually not worried about non-stick surfaces at all. Mostly, I want to get a ceramic to get my wife to stop jamming me about her fears over non-stick. She keeps wanting me to use stainless, and after a lifetime in the restaurant industry, no way am I using stainless for eggs.

pinschegavachoYeah the restaurant I worked at we had one no stick pan for eggs and that was it.

JbaboI actually also use non-stick for eggs as well pretty regularly......for me, for some reason, the eggs seem to cook more evenly..........have no idea why, but also, to keep from scratching the bottom of the pan, i use a wooden spoon to scramble the eggs within the pan while they are cooking and then I never scratch the bottom of the pan.
