Simple, Homemade Mac n' Hamburger - The ultimate Comfort Food! This is my recipe, modified over the years to what I like best. I don't doubt there are dozens of variations out there.
The best thing about it is you can just play around with the recipe however you want to make it perfect for your family!
Makes 8 servings of 1.5 cup
1-1.5 lb hamburger 1/2 yellow onion 2-3 cloves garlic 1 tbsp olive oil 1 can (10 oz) Ro*Tel Diced Tomatoes & Green Chilies, undrained 1 can (14.5 oz) Diced tomatoes 1/4 cup chopped fresh basil 1/4 cup chopped fresh parsley 1 box elbow noodles or similar (cavatappi, etc) 2 tbsp salt (pasta water) + salt and pepper to taste Fresh grated parmesan cheese to taste

Follow instructions to cook full box of pasta. While the water is boiling, Combine chopped basil and parsley in a bowl, set aside chop onion peel, crush, and dice garlic cloves in a large pot add olive oil over medium heat Add onion and garlic to pot, cook until onion is translucent add hamburger, cook until brown Drain grease, return hamburger to pot add Ro-Tel tomatoes and Diced tomatoes, simmer Drain pasta when al dente Add pasta to hamburger, ~1 cup at a time until desired mix Salt and pepper to taste stir, simmer about 10 minutes to combine flavors and heat
Transfer to bowls, top each bowl with chopped parsley + basil add parmesan to taste and enjoy!
