We all went vegetarian for a while and were in desperate need of some decent recipes. I really can't recall where I got it from originally but I've adjusted it as I went along. It is nowa family favourite. Even meat eaters love this meal.
In one pot boil up 2 cups of red lentils until they're almost cooked. Fifteen minutes should do it.
Chop up 2 brown onions. Put them in a microwave safe glass container with a a little oil (and covered) and cook them for about 10 minutes until they become translucent.
At the same time, in a large pot, add 3 tins of tomatoes. Bring to the boil. Once the onions are done, add them to this pot. To the tomato mixture add:
2 tsp chilli flakes; 2 tsp oregano flakes; 2 tsp cumin powder; 2 tsp coriander powder.
Continue to boil the mixture in order to reduce it to a thicker consistency. When the lentils are cooked, drain them add them to the tomato mixture.
Then add 1 tin of precooked red kidney beans and 1 tin of other precooked beans such as cannellini beans, butter beans or whatever type you want. Make sure you rinse and drain them them before adding them.
If you feel that you need to add a bit more tomato taste to your mixture you can add a bit of tomato paste.
Once your mixture has reached a decent consistency and everything is cooked then layer a large oven proof dish first with tortilla rounds, topped with some of your mixture and covered with grated cheese. Contintue to build it up like this.
Then put it in the oven for about 15 minutes at 180 degrees Celcius. And you're done. Add a few dollops of sour cream when serving. I hope you love this as much as we do!
