True Italian Tomato Sauce
Keep it simple. Go to the summer farmers market to grab 10 beefy tomatoes of your favorite variety, or pick them from your wonderful home garden!
-Cut out stem from tomatoes -Cut a light 'x' on the bottoms and place in boiling water until you see them start to peel ever so slightly. You don't want them to cook, so removed and let cool. pull off loose skin and throw away. This part gets messy. squeeze tomatoes to remove seeds and gel. You can leave this if you like, but I find the seeds give a bitter taste. -Add 4 tablespoons of olive oil into a pot -Dice 1 onion finely and add to olive oil on medium -Cook down and salt and pepper to taste -add 3 cloves of smashed garlic (keep these big if you want to remove later. Dice finely if you want to keep in the sauce -Add all of the tomatoes and cook on low for 1-2 hours. This lets the natural sugars of the tomatoes come out while also cooking off some of the water. Season with basil, oregano, parsley or any italian herbs you like. -Mash the tomatoes down that haven't broken down naturally, or even blend for a smooth sauce
