Roasted squash and black bean tacos (vegan)
Roasted squash (or cauliflower) - slice into halfmoons - season with salt, pepper, Chile, cumin - Approx. 20 minutes at 415 degrees
Black beans - Saute diced onion & garlic in pot - add can o' beans, partially drained - Season with salt, pepper, Chile powder, cumin - Simmer. Stir and mash at medium heat until soft with some lumps
Serve on corn tortillas Roasted veggie + Black beans + Avocado slice + Coitija cheese + Valentino hot sauce drizzle
