Sweet & Spicy Pork Tenderloin
Perks ◘ It's so declicious you'll be salivating the entire time you're making it. ◘ It only takes about half an hour total before it's on a plate and in your mouth. (Let's be real, us 9-5'ers don't want to slave over a stove after a long day just to enjoy something that tastes good!) Feeds ~4-6, so if you're cooking for 2, you've got some EXCELLENT leftovers!
I've always been a personal believer that the best recipes are those that are both delicious and simple. Sure, slaving over the stove for hours to create something that diddles your tastebuds is rewarding...but even moreso when it doesn't use up all of your relaxation time and is still just as diddle-icious to the buds.
Ingredients: 2 TBSP Chili Powder 1 TSP Paprika 1 TSP Salt 1/2 TSP Pepper 2 Pork Tenderloins, trimmed 1 TBSP Vegetable Oil 1/4 Cup Ketchup 2 TSP Cider Vinegar 1 1/2 TSP Sugar
Preparation: 1) Adjust your oven rack to middle position and heat the oven to 450°. Combine chili powder, paprika, salt, and pepper in a bowl. Reserve 1 TBSP of the spice mixture for later. Pat pork dry with paper towels and season it with the remaing spice mixture in your bowl.
2) Heat oil in a 12-inch skillet over medium-high heat until just smoking. Cook the tenderloins by rotating every couple of minutes until browned on all sides (about 5-7 minutes total). Transfer pork to a wire rack set inside an aluminum foil-lined baking sheet. Bake approximately 15-18 minutes. Transfer meat to a platter, and let rest for 5 minutes.
3) Combine TBSP of reserved spice mixture, ketchup, vinegar, and sugar in a bowl and brush over the pork. Slice and serve.
**Pro-tip: This is also an excellent recipe to switch up the spice mixture you use and try out different flavors. Experiment and go wild! :)
