Asian Vegetable Curry A family favourite from Canadian Living. It's easy to make; full of flavour and satisfies our curry hankering.
Ingredients: Tempeh or veg burgers x3 Onion 1 cup Coconut milk 1 can Oriental eggplant 1 1/2 cups Spinach 4 cups Peas 2 cups Tomato or V8 juice 3 cups Red pepper 1 Mango chutney of choice Red curry paste Almond slivers
Directions: Fry onions and curry paste When flavour of curry is released, add broken up tempeh/veg burgers; brown. Add eggplant & peppers, cook till soft Add coconut milk & tomato juice When heated through add peas and spinach Serve hot with your favourite rice, garnished with almond slivers and chutney.
