There Are Pandas, and Then There Are Pandas.
And this isn't either of them! The Pandas we're talking about here, are watches, not bears. And what got me thinking about them (again) was a link posted this morning by @cm.rook who pointed a few of us to the very attractive (and not terribly priced) Yema "Rallygraph" Panda which, in it's most traditional arrangement, looks like the one on the left, but can also be had in the version on the right: The model on the left is a true Panda, while the model on the right is called a reverse Panda. The reason for that distinction is clear--Panda bears, only come in the first arrangement. Now at this point, everyone should be thinking about the most well-know Panda, The Rolex Panda, which is actually a Daytona, and among Rolex Daytonas, the most famous of which is the Paul Newman Daytona, which was famous first, because it was Paul's, and second because it sold at auction for $17.8 million (US Dollars). Ingredients: - 1 lb chicken breast, cut into strips - 1 red bell pepper, sliced - 1 green bell pepper, sliced - 1 red onion, sliced - Additional peppers to taste (I like a poblano and maybe a jalapeno or a couple serranos) - 2 Tbsp oil - 2 Tsp chili powder - 1 Tsp ground cumin - 1 Tsp hot sauce - 1 lime - salt - pepper - tortillas
1. Salt and pepper the chicken to taste and set aside
2. Heat 1 Tbsp oil in a large skillet (not non-stick; cast iron is best) over high heat until shimmering
3. Add the chicken. Don't crowd the pan - cook in batches if needed. Cook for ~5 min, scraping up any browned bits, until the chicken is fully cooked.
4. Remove the chicken to a bowl and squeeze the lime over it - set aside.
5. Add 1 Tbsp of oil to the pan and heat until shimmering
6. Add the peppers, onions, chili powder, and cumin. Saute over high heat for a couple minutes - you want your vegetables to stay slightly crisp.
7. Return the chicken (and lime juice) to the pan and add the hot sauce. Mix until everything is evenly coated and serve with tortillas.
