There Are Pandas, and Then There Are Pandas.
And this isn't either of them! The Pandas we're talking about here, are watches, not bears. And what got me thinking about them (again) was a link posted this morning by @cm.rook who pointed a few of us to the very attractive (and not terribly priced) Yema "Rallygraph" Panda which, in it's most traditional arrangement, looks like the one on the left, but can also be had in the version on the right: The model on the left is a true Panda, while the model on the right is called a reverse Panda. The reason for that distinction is clear--Panda bears, only come in the first arrangement. Ingredients 500g butter 500g dark chocolate 10 eggs 10 egg yolks 320g sugar 200g flour Butter or non stick spray for molds Optional White chocolate to put in the middle of the fondant ( would recommend ) Instructions: Set convection oven at 210c bit higher if you have a regular ol' electric oven. Melt chocolate and butter in the microwave ( be careful not to burn them) Whip sugar and eggs into a light foam ( heavier and whiter the foam more white the fondant will be) Combine melted butter, chocolate, egg and sugar mixture and sift the in the flour. Put the fondant mass into a pastry bag for so its easier to fill the molds later on, you can keep it ready in the fridge for few days. You are pretty much done at this point, Grease and fill your molds 2/3 of the way ( i used 5~7cm diameter molds, if you have something larger you might want to lower the temp and keep it at the oven a tad longer ) with the fondant and bake for 5 minutes for reaaally loose center or 6-7 minutes with a bit firmer texture, making fondant is a bit tricky when it comes to the baking part so i would recommend to do a bit of testing on the temperature and baking time. Serve with vanilla ice cream and raspberry sauce.
The recipe is what we used in a restaurant so its a bit big for personal use, but its pretty easy make smaller.
