Matt's Meatballs 1 lb Ground Beef 1 lb Ground spicy Italian pork sausage 1/3 cup grated Parmesan Reggiano 1 Tbps Basil 1 Tbps Thyme 1 Tbps Garlic powder 1 Tbps Onion Powder 1 Tbps Fresh cracked pepper a few shakes of Worcestershire sauce a few pinches of salt 1 egg 1 cup Italian bread crumbs Make sure beef and sausage are cold before mixing to preserve fat, mix everything except bread crumbs together until combined but make sure not to let it warm up too much. Then slowly incorporate bread crumbs until mixture holds together and keeps shape. Form into balls roughly 1 1/2 inch in diameter.
Preheat dutch oven (or heavy bottom pot) on stove over medium high heat, add olive oil and heat until shimmering. Add meat balls and sear on at least two sides. Once seared on two sides lower stove top to medium and add pasta sauce of choice, make sure meatballs are covered. Allow to simmer for 8-10 minutes covered. Remove from heat and immediately serve spooned over al dente pasta.
