Frozen ingredients to amazing paella quicker than a freezer pizza!
(I actually developed this recipe myself!)
Pressure Cooker Paella
Combine in the bottom of a pressure cooker: 1 Tablespoon olive oil 1 cup rice 1 cup chicken stock 1/2 cup water 1/2 teaspoon paprika Pinch of salt Pinch of saffron Handful of sliced chorizo
Mix in an assortment of frozen seafood (maybe 3-4 of each): Scallops Shrimp Mussels Cod chunks Optionally add in: (I think these improve the taste quite a bit, but it takes a few minutes more) 1 Onion, minced 2 Cloves garlic, minced
Cook for 8 mins on high. Depressurize fast. If its still a little soggy, stir and let it stand a minute with the pressure cooker on the "warm" setting.
