Any recipe suggestions for squash? I've only recently started roasting butternut and acorn squash, normally with butter and brown sugar. I'm looking for some options more on the savory side.

StetsSpaghetti squash roasted with olive oil, salt, pepper, and garlic is pretty good. Shred it and top with parmesan and you have a nice simple side dish.

StetsParmesan, garlic, spaghetti squash, bake until tender, super simple. Another is yellow squash in spaghetti with hot sausage meat sauce, unbelievably good, I guarantee you will eat yourself into a coma with that one.
StetsButternut squash makes an awesome thick and luxurious soup. Roast it and puree it with chicken or veggie stock. You can keep it simple by pureeing onion, celery, carrot, potato, and butter with it. If you want it savoury puree it with a bit of turmeric/curry powder, ginger, garlic, cumin, cinnamon, chili powder (if you like it spicy). If you can, toast the cumin whole and ground it first so it can bloom. S&P to taste, of course.

StetsButternut or Acrorn, you can cube ot up and roast it in the oven with some olive oil, seasalt and fresh herbs loke rosemary or thyme. Another option is to smoke it. I LOVE smoked acorn squash!!

Stetssquash pizza with fried sage and ground beef. no sauce, the squash becomes the sauce. roast the squash first while the pizza dough raises.

b9d9ffdad3ac59e7f6fYes!!!!! I sauté onions & garlic in butter before pureeing them in and that curry you suggested. I do like a little splash of cream (or coconut cream) to finish it. Definitely a great savory base for a soup

StetsKabocha squash simmered in a light dashi broth. Serve as an accompaniment to a short/medium grain white rice. Drizzle a little soy & sesame oil if you like.
