I have friends over about once or twice a month. We play eat then play board games. I'm looking for some relatively inexpensive meals to serve that don't take up a lot of time and feed 3-5 people.
I'm good with stir fry, soups/stews, and stove top stuff. I don't generally use my oven unless its a prepared meal (IE the frozen isle at Walmart). Though im not afraid of using it.
I prefer chicken to pork or beef, but anything is good as long as its inexpensive. And spice is always welcome.

MyFootChicken Tacos (I prefer soft but hard is fine too). Chop chicken breast or thigh into strips, add cumin, paprika, salt, you said spice is welcome so maybe chili flakes to taste. Add a little lemon juice and mix it together. Put a little oil in a pan (not much, we're not looking to fry it. Spray oil would do). sear the chicken. If you have a barbecue you could cook it on that, or a griddle pan, but a normal one will do. remove the chicken and add capsicum (peppers) cut into strips, onion, a bit more cumin and paprika and a little water (careful, you only want a splash and you don't want it to spit). When they're soft and cooked, remove from the pan. Assemble your tacos with the chicken, the onion and capsicum mix, lettuce, tomato if you dig it, cheese if you want.

MyFootGet a nice flank steak, add salt and pepper and pan sear or broil it on the hottest setting. Couple minutes on each side.
then in a blender combine about two cups olive oil, couple cloves of garlic, two bunches of basil and about a half cup Parmesan cheese, blend till smooth.
cut the flank steak against the grain, place on a platter and pour the sauce over and serve with some rolls for the table.
My my buddies and I do this when we have board game nights and it’s always a hit! we have been playing a board game called power grid recently and it’s a great time, you should check it out if you haven’t already!

MyFootBuy a pound of goats cheese, warm it up and mix with garlic and Italian seasoning and bake a super simple pita bread, lightly pan fry the pita to make chips, and you've got an insanely delicious and super classy chip and dip combo (get the goats cheese at sams or Costco, it's like 7 bucks a bound there)

MyFootOur D&D group usually does crock pot sloppy joes, it's low brow, but easy to graze on over a several hour gaming session.

MyFootPork Chile Verde: 2 to 3 lbs pork sirloin, cubed to 1/2 inch 1 28 can of green chile sauce 1 28 can of crushed tomatillos 1 8 oz can of diced green chiles 1 large diced onion. 2 Tbsp Ancho Chili powder (or to taste) 1 tbsp of ground cumin (or to taste) 1 tbsp granulated garlic (or to taste) Salt to taste
Sour cream as a garnish.
Brown the sirloin in a large pot, remove and saute onions in the pot until they start to caramelize . Add pork and remaining ingredients back to pot and let simmer low and slow for several hours until pork is very tender and sauce has thickened. A TBL of cornstarch in cold water added to the mix will thicken it up.
Now, it sounds like it might be a little "canned" for most people. But, so long as the spices are fresh after hours of simmering there is not a lot of taste difference between starting from scratch and doing it from canned. Adding fresh tomatillos is perfectly fine, when they are super cheap in the stores/farmers market I add some in for a little freshness. Really want to kick it up? Smoke the pork if you have a smoker.
Once you have this as a base, you can use it for a lot of things: Right out of the bowl as chili Over Mexican rice and/or beans Nachos Tacos Burritos
