How do I get crunchy, crusty bread at home? I've been toying with a few different recipes and cooking methods, but have not been able to achieve a nice, crusty, peasant-stye bread.

CaimaNGood question. I am not a pro on breads, but from what I have learned, steam is the best way to get moist inside and crusty outside. I doubt you have a steam oven, but there are several methods for this style of baking. See below - this method is overkill but the best.

CaimaNI use the no knead method with pretty nice results! Lately I've been making sourdough but regular is just as good. The key to a good crust is keeping steam in the oven, Usually this is done by baking the bread in a dutch oven, but you can also put a pan with a couple cups of water in it on the second oven rack. https://www.browneyedbaker.com/no-knead-bread/

CaimaNI have a tiny breville smart oven so its a lot easier for me, but this is what i do.
Got a 1/4 sheet pan and a large steel chain from the hardware store, put the chain in the pan and leave it in the bottom of the oven. it serves two purposes.
a. more even heat in the oven, similar to leaving a pizza or bread stone in the oven.
b. when I need steam for bread, i just grab my trusty bread water gun ( super soaker mini) and shoot the chains as soon as i put in the loaf. has to be a pretty decent water gun as you need the volume of water and you need to be far away from it when you add water as steam burns.

cs85b03I do something kind of like that article that you linked to. I place a large casserole dish in the oven near the bottom and fill it 3/4 full of water prior to preheating the oven. Once it preheats, make sure that you give it enough time for that water to be letting off a good bit of steam. Once it is, place the bread in the oven to bake. I've had good results doing it this way.

CaimaNThrow a handful of ice in the oven. It will create steam and give you a really good crust.
