What's the best way to make poached egg?

ZakariaMYou need to find someone with backyard chickens, and determine when they collect their eggs. About an hour before they would go out to collect the eggs, sneak into their yard and poach one (or more) eggs from their coop. Via this timing, there should be eggs for you to poach. Be sure to wear non-descript clothing, and make sure they don't have any dogs. Bonus points for using lockpicks or one of the pocket grappling hooks from the EDC community.

ZakariaMSous Vide. Place a fridge temp (38 to 40°F ) egg into 167°F water for 13 minutes. This works best for extra large eggs, usually aroung 63-65 grams each. Use the freshest eggs you can get, ideally via poaching them from a neighbor's chicken coop as @metis mentioned, haha. That said, straight from the grocer shelf should come out fine, within a week is probably great too. Eat them immediately, or stop them from further cooking via ice water and put them in the fridge. They can be reheated by putting them in 145°F water for ~15 minutes, should come out ok without overcooking them further.

ZakariaMAdd a little bit of white vinegar to the pot of water (about 1oz per quart) Heat it until it’s about 190f. Never boiling. Stir the water with a spoon to create a vortex in the center. Drop the egg right in the middle of the vortex. Cook until it is easy to scoop out with a slotted spoon and the whites are cooked through. This only works for poaching a single egg though. For multiple eggs, do not stir the water.

ZakariaMUsing cling film is the best and easiest. cut a big piece, run a drop of oil on top, carefully break your egg inside, close it making a package with the egg in the middle with no air inside, use a piece of cling film to wrap the end and tie it to close. you can do this the day before ready for the morning. ZakariaMI like poaching eggs in marinara sauce. The thicker sauce holds the shape better and it picks up the flavor of the sauce too, of course.
