Some people say it's pork cheek, but the original recipe involves bacon. You beat the eggs, add some Pecorino cheese, a pinch of salt and a pinch of pepper. That's all it takes to make the real carbonara ;). (Obviously you need to add the cubed and cooked bacon after you added your spaghetti to the eggs)

Yesman911i like to use pancetta sometimes... and like you said, eggs, salt, pepper, cheese... real carbonara is that simple

M.B.7Yeah, i meant pancetta but being italian i tried to translate that and "guanciale" because i don't really know how different cuts of meat are called in english
