Easiest peeling eggs are the ones that set in the fridge for two weeks. Fresh eggs are the hardest to peel.
Take the oldest egg in your fridge, put it in a pan covered with water and heat it to a gentle rolling boil for one minute and let it sit covered for 12. Then put it under cold running water and the shell will typically come off in 2 or 3 large pieces. You should get soft set whites and yolks that make lovely looking deviled eggs or something pretty for a salad.
