Peel a Hard Boiled Egg

What's the easiest way to peel a hard boiled egg? I've tried putting baking soda in the water which works sometimes. Does it depend on the type of egg (regular, cage free, organic, free range) -- kind of like certain potatoes are best for certain recipes?

Dash 1 side of the egg against a hard, flat surface. Maintaining pressure, roll it over 1 complete round. It should have its shell crushed around the middle, making it easier to remove the top and bottom portions after the middle bits are removed

The key for easy-to-peel eggs as I have found is to start cooking with boiling water for about 1 minute. The high temperature will cook the outer part of the egg really fast, thus prevent it from sticking to the thin film between the shell and the egg. After 1 minute, you can adjust the temperature to achieve your desired doneness. Also, when you peel, try to roll the egg gently over a hard surface to break the shell into small pieces and to detach the shell and the film from the egg. Doing that extra step will help you to peel the egg not only easier but also much faster.

Easiest peeling eggs are the ones that set in the fridge for two weeks. Fresh eggs are the hardest to peel.
Take the oldest egg in your fridge, put it in a pan covered with water and heat it to a gentle rolling boil for one minute and let it sit covered for 12. Then put it under cold running water and the shell will typically come off in 2 or 3 large pieces. You should get soft set whites and yolks that make lovely looking deviled eggs or something pretty for a salad.

Ill use a small pin to poke a hole in two sides of the egg before I boil them, use a pinch of baking soda then make sure they are 100% cool before I peel. works almost all the time.

The fresher the egg the easier it is to peel, I've found. Also if you use a spoon or fork to crack in a line down the entire egg it makes it easier to peel off large sections all at once
