quiltnsew6Less bitterness and acidity. More sweetness. The application of different temperatures and pressures have a significant effect on what's dissolved/extracted from the beans.

quiltnsew6During the hot brewing process, the hot water activates a number of volatile compounds in coffee. Apart from just exciting the molecules and causing a quick extraction, hot water also extracts specific parts of the coffee at different times and rates. Specifically I think it has to do with the extraction of certain chlorogenic acids, which impart flavors ranging from fruity, to just plain bitter.
Cold brew, while taking a longer period of time, absent heat doesn't activate these compounds and will typically give you a rounded chocolaty profile. I personally find Latin American coffees to be great for cold brewing !
