I'm a vegan trying to come up with a turkey-less but meaty meal I can cook on a slow cooker. Any ideas?

narocho3Who's going to be eating it? Are you serving to non-vegans? Does it need to be whole in form and texture or simply provide the equivalent nutrition and maintain the holiday atmosphere?
If you're looking for whole meat-like, vital wheat gluten is the easy answer. You can go to an Asian grocer and find mock duck, mock chicken, and so on. It's basically wheat gluten flavored with soy sauce, msg, and other bombastic flavorings. Mass-produced soy sauce has no fish component but do check the package for non-veganness. You could do it yourself, of course, from vital wheat gluten flour, but you're behind schedule at this point. Or you could just get Seitan slabs and call it steak.
While you're at the Asian grocer there are also many more forms of soy and wheat gluten. There's stuff like puffed Seitan, which can be a lot of fun in a stew-like sauce. In any event, most of these do not need much cooking, just warming. So you'll be building the base/sauce in the slow cooker, and dumping them in at the end to warm.
Not a main dish, but this is my favorite, robust, as-good-as-meat vegan recipe, it's a vegan pate made from mushrooms and nuts: http://www.foodandwine.com/recipes/porcini-and-pecan-pate Don't even need the slow cooker for this one.
As for a slow cooker main at this late stage, if you have access to an oven, make eggplant bacon https://minimalistbaker.com/crispy-eggplant-bacon/, while making a barbecue sauce http://thewholeserving.com/wp/homemade-vegan-barbeque-sauce/, in which you will braise beans and vital wheat gluten chunks or seitan in the slow cooker. Top it off with the bacon when done.
