If your guests like seafood, salmon is likewise ruining. Especially if you crisp up the skin in contrast. Basically get a steel/iron pan very hot, throw some kosher salt on it, a little bit oil, and crisp the skin up for about 15 seconds. The salmon can be very simple. Bag it with something like lemon and dill at a minimum.
Scallops are a good choice too.
If your guests are bit more adventurous (e.g., they've already had these), then you can always do duck confit, short ribs, tacos de lengua (beef tongue).
If your guests are vegetarian/vegan then I would do carrots, beets, and parsnips.
