Some info are available here: https://knifeup.com/how-good-is-nitro-v-stainless-steel/ Extract: " Nitro V is a martensitic stainless steel with a chromium-based composition. The breakdown of the elements is as follows:
  • Iron – 84.9662%
  • Carbon – 0.68%
  • Chromium – 12.98%
  • Vanadium – 0.079%
  • Nitrogen – 0.1098%
  • Manganese – 0.78%
  • Silicon – 0.384%
  • Phosphorus – 0.019%
  • Sulfur – 0.002%
" I'm not a steel expert but I think that the corrosion resistance of this steel is preponderant compared to the cutting capacity (the carbon content is not very high whereas it is the case for chromium). That said, I have this knife that I wear and use frequently since my purchase (its robustness is reassuring) and I am very satisfied with its cutting capacity and performance... the heat treatment must be very well done (the "best" steel with a bad thermic treatment = bad result).

Further to the answer already given, it also holds an edge longer and is even less likely to rust.

AEB-L with nitrogen and vanadium. It's a really nice steel to sharpen, feels like a carbon steel on the stone.
