I have been working on my sourdough baking recently. I have been composting excess starter, but it seems like a waste. Does anyone have any tips or suggestions for how to utilize this leftover starter?

Dracorio1It is a shame to waste starter, I've found this video about starter pancakes which is great BUT in my experience you need to use fresher starter otherwise the taste will be too sour. By fresh starter I mean starter that's been refreshed in the last 24 hours, if you're on a cycle of refreshing your starter each day.

Dracorio1You can easily make crepes (there is a ton of recipes in the internet). The flavor is amazing.

leexI like his approach, but you really don't need to feed the starter every day. Fridge that thing, feed it once a week. Or less... a good starter is super durable and pretty easy to rehab. I thought I'd killed my starter, by not feeding for three weeks, and he's back to full strength with three feedings.
I guess if you WANT a pancake thing every day, you can do that. But you don't NEED to discard on the daily
