Anyone have a really good Christmas dessert recipe that's gluten-free AND relatively low in carbs (besides fruit, haha)? Looking to serve about eight at a small potluck. My guess is that the best option will be something eggy and/or custard-y ...

fiatluxGluten Free Cookie Balls
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened 40 Gluten free OREO Cookies, finely crushed, divided 4 pkg. (4 oz. each) BAKER'S Semi-Sweet Chocolate, broken into pieces, melted Mix cream cheese and 3 cups cookie crumbs until blended. Shape into 48 (1-inch) balls. Freeze 10 min. Dip balls in melted chocolate; place in single layer in shallow waxed paper-lined pan. Sprinkle with remaining cookie crumbs. Refrigerate 1 hour or until firm.

fiatluxTechnical note: fruit isn't generally low carb.
Cheesecake can be made low carb, as can various versions of standalone custards, like crema catalan, flan, or even creme brulee (don't eat the brulee).
