If you're interested in cakes: http://cakemixdoctor.com/ I point to Cake Mix Doctor, because cake mixes have all manner of chemical enhancements that improve the cake, both in terms of moist crumb and overall rise, that are not easily available to home cooks. There are thousands of ways to alter cake mix, from scratch frosting to changing the fats (Portillos in Chicago makes a very much lauded cake that uses Duncan Hines with mayonnaise as the fat, as an example) and the hydration ratio). Why kill yourself to make a cake from scratch when you can doctor a mix and come out with a better result.
