Hi Josh. I just started a batch of Water Kefir yesterday to help get my New Year’s rebooted. I am not the best had always making the best (healthy) food choices, and as a professional Chef I have tried just about every fad diet out there. I have given up on “being good” and just trying to “be better”. That’s where the probiotic-rich beverage Kefir comes in. Like other fermented foods, Kefir is an easy way to add probiotics to your daily routine. I purchased my Kefir grains online (amazon) the grains consist of bacteria and yeast that you use to make a batch of Kefir, you mix water (or coconut water) sugar with the grains and let if ferment a day or two. Then strain it out and flavor it with fruit juice and bottle it in an air tight jar for a second fermentation. This second fermentation done under presser carbonates the water and you get a fun and tasty alternative to soda. I don’t know about all the health benefits that surround the probiotic craze but I figure that there has to be something to all the hype and I am having fun making my own bubble juice.
