Healthy Cooking To Start Out The Year?

Hi folks - so, I'm sure I'm not the only one, but the Holidays always expand the waistline for me. I'm back to eating healthy now.........and dropping a bit of what came on. Everywhere I see juicing, etc., as the kickstart to getting back to healthy eating, but I'm curious about some ways to prepare veggies and light meats (like poultry) in an interesting way. Veggies especially - any good tips or recipes/ideas? I shared one a while ago about riced cauliflower, but would love some more......

The simple answer is either the 21-day kickstarte from PCRM (Physicians Committee for Responsible Medicine). Really, the new nutritional science points only one way and that is to a Whole Foods Plant-Based diet, without added Sugar, Oil, or Salt. Within a half a year you'll be back in fighting trim. The nutritional science is from T. Colin Campbell (see the T. Colin Campbell Center for Nutrition Studies at Cornell), and the clinical experience is from the likes of Dr. Esselstyn, Dr. Neal Barnard, Dr. Robert Ostfeld, Dr. John McDougall, and many others. It is a new nutritional paradigm, not a diet, and once you make the transition, you won't go back. Who wants to feel miserable again?

If you need a cleanse, see a doctor. Your kidneys aren't functioning, and you need dialysis. Not some coffee shot up your butt or a liquid kale shake diet.
If you have gained some pounds from the holidays, eat some simple food. Roast some veggies in your oven, saute some protein in a pan. Make a vinaigrette for both. Doesn't take a drastic intervention to drop 10 lbs of holiday weight.
If you have more weight to lose, try something more in the line of carb reduction.
Hi Josh. I just started a batch of Water Kefir yesterday to help get my New Year’s rebooted. I am not the best had always making the best (healthy) food choices, and as a professional Chef I have tried just about every fad diet out there. I have given up on “being good” and just trying to “be better”. That’s where the probiotic-rich beverage Kefir comes in. Like other fermented foods, Kefir is an easy way to add probiotics to your daily routine. I purchased my Kefir grains online (amazon) the grains consist of bacteria and yeast that you use to make a batch of Kefir, you mix water (or coconut water) sugar with the grains and let if ferment a day or two. Then strain it out and flavor it with fruit juice and bottle it in an air tight jar for a second fermentation. This second fermentation done under presser carbonates the water and you get a fun and tasty alternative to soda. I don’t know about all the health benefits that surround the probiotic craze but I figure that there has to be something to all the hype and I am having fun making my own bubble juice.

Healthy cooking? I think what you're looking for is healthy EATING!
Take the meats and take the vegetables and put them inside your stomach tubes.

Lately I've been really into cabbage steaks, spaghetti squash or zoodles to replace pasta, and pizza with a cauliflower crust! The cauliflower crust is kind of a time intensive one, so if I do that, I always try to make one to eat that night, and one to freeze for later. Also not sure if that one even counts as healthy since I add a lot of cheese to it..

My ex had a recipe for cabbage soup that was out of this world. Low calorie and really tasty. Wish I still had a copy of it!
