It is great for potato salad. The diced potatoes come out perfect. They are not soggy, nor under cooked, plus you can throw in a couple of eggs to hard boil at the same time. Dried garbanzo beans come out nice and creamy, perfect for making hummus. Pork carnitas in 35 minutes of cook time - whoo hoo.

FragglerOk, just want to get this straight: you peel and dice the potatoes, wash the eggs in the shell, put them together in the pot with water, and they cook evenly? (Forgive me- never did this-- and I have a pressure cooker, not an Instant Pot.)

dsaleThe Instantpot is an electric pressure cooker, one of several brands out there. My understanding is stove top models cook at a slightly higher pressure. With an electric pressure cooker, place the eggs on top of the potatoes in the pot, 4 minutes cook time, do a quick pressure release. place eggs in cold water bath. I use red potatoes and I don't peel them. If you go to Pinterest, there are many Instantpot/pressure cooker recipes with cooking times for all sorts of wonderful foods. The pressure cooker is also great for deviled eggs - the shells come off so easy, no sticking.

FragglerThx! Yes, I should've clarified: I have a newish, electronic pressure cooker. Yet it wasn't referred to as an Instant Pot when I bought it a few years ago. Thx also for the hints on the potatoes/eggs! I'll definitely try that!

FragglerI have a pressure cooker, but cubed potatoes for potato salad cook in just a few minutes in a saucepan on the stovetop. What with pressure up and down, I don't think you're saving any time using this gadget.
