My biggest tip would be to pack light. Bring as few cameras and lenses as possible. My go-to right now is a Canon 7D with a 50mm f/1.4 because it's fast, relatively small, and really easy to pack. I use a Camelbak L.U.X.E. backpack; they pack really tiny when empty and expand a massive amount. you'd be surprised how much you can fit in one of those (I fit my 7D, a 24-105mm, a 16-35mm, and a 50mm as well as chargers, cables, backup batteries and other accessories once).
