Is there any issue with keeping this stored in the sack (in a dry cupboard at room temp.) for longer periods of time/a few months at a time?

No issue as long as it's definitely dry first. The coating would hold up if it was damp, but you could get mildew forming which would be gross. So let it dry in the house for a day or two and then pack up it up if you're storing it for months at at time.
