Is it possible to adapt this for Bluetooth + RGB? How do you setup a rotary encoder?

Bluetooth is technically possible, but not easy (you would need an addon module, a battery and a special case with room for the two). The board supports RGB underglow but you would have to solder the 9 WS2812B-compatible 5050 RGB LEDs yourself.
