Would a USB-C to lightning cable work for wired use with iPhones? And - does such a cable exist?

Such cables do exist - they are available from Apple, Amazon, Monoprice, etc. I can't think of any reason they wouldn't work in your situation, although it might be hard to find a really short one for portable use.

There's a reason all the best DACs are USB-C. But there are a couple catches for iPhone users beyond that. The first is yes you need a specific USB-C to lightning adapter (OTG) most do not actually work for this type of use. The second is that the iPhone is pretty limited when it comes to audio. This is why a USB-C version of something will punt out 32bit 384khz but the lightning versions are all 24bit 92khz so your milage may vary when you actually connect a USB-C DAC to an iPhone even if you have the OTG cable. Personally I wouldn't bother with a DAC for an iphone unless it specifically states it's for iPhone as well, lets you know what quality it supports on iPhone, and ships with the OTG cable as well.
