do you need to do any soldering for the rotary encoder?

11blakeTechnically, yes. There are 5 pins that you would need to solder. There are 2 supporting pins that are supposed to hold it in place. You might be able to get away with just bending the support pins to hold it down and bending the other pins onto the pcb contacts, but it would be better to solder them in.

What rotary encoder and knob did you buy, because that one fits perfectly! Could you link to it?

WooglinI found them both on amazon. The encoder stem is quite tall so I cut about 4 mm off of the top so the knob would sit further down. I would have preferred sharper knurling on the knob, but thats just me. The encoder is: https://www.amazon.com/gp/product/B07D3DF8TK/ref=ppx_yo_dt_b_asin_title_o09_s00?ie=UTF8&psc=1 and the knob is: https://www.amazon.com/gp/product/B07TXYBB7Z/ref=ppx_yo_dt_b_asin_title_o04_s01?ie=UTF8&psc=1
