When I'm recording live musicians I generally use closed-back headphones during tracking to minimize bleed into the microphones and of course, for isolation. I have all kinds of headphones in my studio, including several pairs of ATHM50 headphones for clients and even some Sony MDR 7506s, which I find people still really love. I personally use Focal Spirit Professional headphones for tracking. They are very close to my Massdrop Sennheiser HD58X Jubilee open-backed headphones. The Spirit Pros have a bit more extended high end, that isn't in any way harsh and an exceptionally clear low end. Even with a lot of instruments competing for space there is always depth and a clear soundstage. As with any headphones, all of them benefit from excellent conversion and being driven appropriately. The Sony MDR 7506s don't even sound like the same headphones when you put them through an Apogee Groove DAC.
