Should I use gain setting at I or II if reach the ideal volume on both sides? At I it is like 10 o clock and at II it is like 8 o clock. I know usually lower gain is better but given for 789 gain I is at 0.75x I am not sure it would have a negative impact on SQ.

Gain setting I is best for you. It doesn't matter if the gain is 0.75x; it won't have any adverse effect on sound quality. It is better to have the volume control at 10 o'clock (gain setting I) instead of 8 o'clock (gain setting II) because many volume controls have channel balance issues when turned almost all the way counter-clockwise.
