I am disappointed with the black steel pans. I was hoping for a relatively light weight pan that heats up fast and "maybe" take a seasoning. Hoping for thin like my good cabon steel wok. Bought a Matfer and this thing is almost HEAVIER than my old school cast iron and has WAY LESS cooking surface. Tried to season it per instructions and youtube videos with MANY layers built up. The seasoning failed even with mild scrubbing. On top of it, I cut some meat gently in the pan like I do all the time in my cast iron, and the damn pan now has DEEP scratches. FAIL pan is FAIL
