If I want to use G-Sync must I use a Nvidia brand GPU? Or can I use another brand GPU like say EVGA?

That didn't make any sense. Nvidia is the chip designer and the one making innovations. Evga either sells the Founders Edition card, or modifies it and repackages it, but it's still nvidia architecture.
