For most purposes, I find it hard to top this one (for the money): https://www.victorinox.com/us/en//Cutlery/Chefs-Knives/Fibrox-Pro-8-Inch-Chefs-Knife/p/5.2063.20
It's not beautiful, but it's a nicely balanced, easy to maintain chef's knife at an entirely reasonable price.
