Not under $150, but has anyone used New West Knife Works? S35VN and an intriguing blade shape, with G-10 handles...they sounds like they’d be worth it to me. Thoughts??

That style of steel will last a lifetime, and is a step up from S30VN steel - https://www.knifeart.com/s30vvss35vn.html - for a little background. And the G-10 handle - https://www.knifeart.com/g10-knife-handle-material.html - quality material for a knife that will last a lifetime. As a chef, and blade enthusiast, I'd say they are worth it. The most important thing when working with a blade is feeling comfortable with it - if you got your eyes set on something, no other knife will compare until you lay your hands on your dream blade. Once you get that reference, you can make adjustments from there - but I think that the New West Knife Works uses solid components, and if you like the way they feel, then you found yourself a knife for life!
