As a chef who cooks on the line as well as at home, I prefer the 15-40 dollar Dexter Chinese cleaver. It's cheap as dirt, it's not too long so works great on the line, and makes for a great chopper/scooper. It's literally the knife I use 90% of the time both professionally and personally at home. Don't get me wrong, I have a handful of wustof, henkels, and Shun knives....all are great, but the best bang for my buck, staying under 150 is easy - 15 dollar Dexter Chinese cleaver.
