I shot Canon for years and loved it. They had great camera bodies, just like Nikon, but I felt like they had 1) more affordable and 2) better quality lenses. Over the past year, however, I've switched to Fuji and won't look back. A friend of mine was raving about the color reproduction, build quality, and "soul" of Fuji cameras. I thought she was full of it. I tried hers for a weekend trip with the family and was sold. The build quality of their camera bodies are astounding and they've got great mirrorless tech. My biggest surprise was how I've been blow away by their post-processing. For years I've always shot RAW and maybe RAW + JPEG if I wanted something to post-quick or send to someone for fun (I've done a few weddings and portrait sessions). Why would anyone shoot JPEG when RAW gives you so much more data and control? With the Fuji ecosystem and their "film simulations" they have as an option, I have been blown away. I often don't need to post-process much of anything. I still shoot Raw+ JPEG but on a few fun sessions have just bracketed 3 film simulations and been thrilled with the results. Plus, while the fuji lenses are pricey and they have much less variety than Canon/Nikon, all seem to be tack sharp and on par with L series glass, where some of the affordable canon lenses were a bit muddy.
To be fair: while I've been doing photography for 15+ years, I am a hobbyist and this is certainly not my livelihood, not to mention I do nothing with video production.
