Also..my son is a professional chef..once you get that protective coating off use lard, wipe a little melted lard in the pan preheated inside and out. Then wipe it off. upside down in a 300 deg oven 2 hours. Critical..let it cool in there or face a warped pan. Do it one more time and it's perfect. A light coating inside and cook something wonderful. Lol..my son says duck fat works too. If old French ladies can do it for hundreds of years..it's good enough for me!! 😂
